Southern fried pork chop sandwiches

Ingredients
- 3.5 Pounds Boneless Pork Loin Roast
- 2 Cups All pur flour
- 0.5 Cups Corn starch
- 1 Cup Plain bread crumbs
- 2 Tablespoons Pasty’s seasoning salt
Instructions
- 1. Thaw the loin.
- 2. Slice into cutlets and smash them out some to tenderize.
- 3. Add all ingredients for the breading to a plastic bag and toss to mix.
- 4. Reserve half a cup of the mixed breading and mix in water one tablespoon at a time until you reach the desired consistency.
- 5. Dredge each pork chop in the batter, then toss in the flour mix. Remove and place to the side.
- 6. Heat vegetable oil to temperature. Add each pork chop, being careful not to overcrowd the pan.
- 7. Remove the pork chops when both sides are golden and brown.
- 8. Place them on a cookie sheet lined with napkins.
- 9. Tamp with paper towels to remove some of the grease.
- 10. Sprinkle with more seasoning.
