Southern fried pork chop sandwiches

  1. 1. Thaw the loin.
  2. 2. Slice into cutlets and smash them out some to tenderize.
  3. 3. Add all ingredients for the breading to a plastic bag and toss to mix.
  4. 4. Reserve half a cup of the mixed breading and mix in water one tablespoon at a time until you reach the desired consistency.
  5. 5. Dredge each pork chop in the batter, then toss in the flour mix. Remove and place to the side.
  6. 6. Heat vegetable oil to temperature. Add each pork chop, being careful not to overcrowd the pan.
  7. 7. Remove the pork chops when both sides are golden and brown.
  8. 8. Place them on a cookie sheet lined with napkins.
  9. 9. Tamp with paper towels to remove some of the grease.
  10. 10. Sprinkle with more seasoning.
