Smoky, Saucy Carolina Party Ribs

Ingredients
- 1 rack pork ribs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 handful apple wood chunks
Instructions
- 1. Thaw the ribs in ice water.
- 2. Cut the ribs into individual pieces.
- 3. Dry the ribs off, then season with salt, pepper, onion powder, garlic powder, and paprika.
- 4. Use the "foil boat" method - put down foil, add paper towels, shape the foil into a boat form fitting the ribs, then flip it over onto a pan.
- 5. Cook the ribs in the foil boat on the grill over indirect heat, using apple wood chunks for amazing flavor, for 1 hour.
- 6. Flip the ribs and cook for another hour.
- 7. Cover the foil boat with a new piece of foil, crimping the edges securely. Cook for 1 more hour.
- 8. Carefully remove the foil boat from the hot grill onto a sheet pan and remove from heat. Let the ribs sit, still covered, for 1 hour.
